Culinary Arts: Food as a Medium

Ask someone to think of the arts and they may imagine a canvas or a stage… but Phil DeWar’s cheffing approach embodies an often forgotten truth that is hidden right in the name of his medium: that the Culinary Arts IS artistry. The same way a painter knows which specific shape and size of brush to use in effect, a chef knows which tool and heat to employ when bringing their vision to life. When designing the sequence of a menu the chef is no different than a musician curating a setlist; each dish setting the stage for the next flavour, complimenting one sensory experience after another to provide a journey for the audience. 

Phil’s relationship with food has continued to evolve and expand to feature food as function: showcasing how eating together sets the table for necessary and even difficult conversations in important places. Breaking bread creates a commonality between individuals, naturally disarming defences and softening our brow to one another. With food as a bridge of communication, Phil tells his story and involves and inspires others to advocate for the change they wants to see in our communities and from the system.
